Ripe cocoa pods are cut open to reveal the beans covered in sweet white pulp. These fresh beans are removed from the pods and prepared for the fermentation process.

The collected cocoa beans are placed in wooden boxes and covered with banana leaves. Over several days, natural fermentation begins—developing the beans’ rich flavor and reducing bitterness.
